Jelly Roll Cake recipe from Make it Sweet - Buche de Noel

 I didn't love the flavor of the cake, in fact I'm not sure I like the flavor of any rolled cakes except for pumpkin roll, but this recipe had helpful tips I want to keep for when I make a rolled cake.   For the Cake- INGREDIENTS 1 C (120 g) all purpose flour 1 1/2 tsp baking powder 6 large egg whites (room temperature) 1/2 cup (100 g) granulated sugar 6 large egg yolks (room temperature) 1/3 cup (50 g) granulated sugar 2 tsp vanilla bean paste (Chocolate variation - instead of 1 cup of flour, use 3/4 cup flour and 1/4 cup cocoa powder) INSTRUCTIONS 1. In a small bowl, whisk together 1 C of all purpose flour and baking powder. Set aside. 2. In metal bowl, beat 6 egg whites and 1/2 cup sugar using hand or stand mixer.  Beat until mixture develops soft peaks.  This will take about 5 minutes.  Do not dump all the sugar in at once, but sprinkle it in, maybe in about 3 batches.  The peaks should be stiff enough that you can turn the bowl upside down and the whit...

Rice Pudding

I've been making rice pudding for Christmas for the last few years.  I like that it is simple and can be made ahead of time.  I have a couple of recipes I like, this is just one of them. I like using arborio rice for rice pudding, though this recipe calls for regular white rice.  Sometimes I like to eat it warm.  This recipe folds in whipped cream, which is yummy, but I don't think is traditional if you want to make what your ancestors made.  Our ancestors had rice pudding with less fat and sugar, and is good, just different.I like to add almond extract as well, or sometimes I do cinnamon....there are lots of variations. Rice Pudding Ingredients : 8 cups of milk (taste better if it has more fat in it, but still okay with less fat) 4 cups of COOKED medium grain rice (I have used long grain and been fine.) 3-4 cups sugar 2 tsp salt 2 eggs, room temperature 4 cups heavy whipping cream 2 tsp vanilla extract Directions : Add milk, rice, sugar and sa...

I made these for our Christmas birthday dessert for baby Jesus, and we all really enjoyed them. I need to have a reason to make some more soon. They are also really easy to make! Raspberry Chocolate Cups Makes 6 muffin cup servings Chocolate Cups 7 oz dark chocolate (55-70% cocoa) 6 aluminum muffin cups (refer to note at bottom) Raspberry Puree 5 oz fresh or frozen raspberries 1/4 cup sugar Chocolate Raspberry Filling 7 oz dark chocolate (55-70% cocoa) 1 1/4 cup whipping cream, cold Raspberry puree Topping Fresh Raspberries Powdered Sugar Prepare the chocolate cups . For tempering the chocolate divide the chocolate into 2 parts, 5.5 oz and 1.5 oz. Place the 5.5 oz chocolate into a heatproof bowl and place over simmering water. Galette des Rois

January 6 is the Epiphany, a day to celebrate when the 3 kings visited Baby Jesus.  I think it is a Catholic holiday.  I learned about it while in France and love the tradition of making a galette des rois/Kings Cake.   The tradition goes you make the cake with a hidden bean inside.  The youngest person at the table sits under the table.  As a slice of cake is plated, the youngster names who gets that slice.  (make sure you slice the cake so you have only as many slices as you do people eating the cake)  Whoever finds the hidden bean is the King or Queen for the evening and wears a crown.  This year, I think I improved my recipe, with more almond filling than I normally add.  I thought it was going to end up messy but instead it made it yummier.  I had some extra filling and decided to make a mini kings cake with the extra puff pastry.  I added some fresh raspberries which tasted quite yummy all warm in the cake.  Though I...

(recipe & image from Martha Stewart) Serves 6-8 Prep: 30 minutes Total: 1 hour 30 minutes Ingredients 1/4 cup plus 1/3 cup sugar 1/4 cup fresh lemon juice 1 store-bought pound cake (12 ounces), cut into 3/4-inch-thick slices 1 bar (8 ounces) reduced-fat cream cheese, room temperature 1 cup heavy cream 3 cups fresh blueberries (three 1/2-pint containers), rinsed and dried 3 cups fresh raspberries (two 6-ounce containers) Directions Make lemon syrup: In a small saucepan, bring 1/4 cup sugar, lemon juice, and 1/4 cup water to a boil over medium heat, stirring to dissolve sugar. Green Eggs & Ham

(image from bravotv.com) I found the following recipe on the Top Chef (Bravo) website and think it is a fun idea for St. Patrick's day. Since we don't eat much meat, we just made the egg and salsa. It was good, the egg is just a normal egg so the salsa makes it a bit more special. My guess is this recipe really pops when you have the ham with it. In any case, I'm hoping our children will think it is fun. This recipe is courtesy Barb Flin t. I requested it thinking Jeff loves eggnog, but turns out he doesn't so I haven't made it. But I hear it is fantastic. (i don't want to get in trouble, so i'm just noting that this picture is being taken from delish.com and was taken by james baigrie) (It makes quite a bit so you will need a large bowl when you combine the two) EGG NOG 1 dozen eggs ½ gallon vanilla ice cream 16 oz cool whip 1 quart milk 1 ¼ cups sugar Nutmeg (optional) Separate eggs (put whites in separate bowl) Beat egg yolks Add 1 cup sugar to yolks Add Milk Add softened ice cream ~~~~~~~~~~~~~~~~~~~~~~~~~~~ Beat egg whites in separate bowl (beat until forms stiff peaks) Add rest of sugar to egg whites Mix two mixtures together Add cool whip Add nutmeg to taste This is very rich but very good…..enjoy

Easter nests

I got this from Mom: 3 Tablespoons margarine or butter 1 Package (10 oz.) regular marshmallows or about 4 cups miniature marshmallows 1 bag (12 oz) chow mein noodles Bags of Easter M&Ms (I prefer the ones with peanuts and the peanut butter ones, yum) Put wax paper on a cookie sheet. Melt butter in a pan then add the marshmallows and stir until they are all melted. After they melt, take the pan off the heat and add the noodles and mix. Then put mounds of this sticky mixture on the cookie sheet. Let them cool a bit (unless you can handle the heat) and then form the mounds into nest shapes. Then add the M&Ms to the center of your nests and you have cute nests with eggs in the middle.
