Lemon Butter Sauce for pasta - via Kristin

Kristin made this and our kids all ate it so it is a recipe I need to keep.  I think it would taste great with some veggies added to the pasta. Lemon Butter Sauce - heat everything together in a saucepan and pour over pasta. Done. ¼  c butter ¼  tsp oregano ¼  tsp basil ¼  tsp garlic 3 Tbsp lemon juice ¼  cup chicken broth

Quinoa Enchilada Casserole

photo cred: http://damndelicious.net/ We had this last week, and while I felt it could have used something extra to give it zing, we all enjoyed it. I think I would add extra cilantro and lime, and more heat. Quinoa Enchilada Casserole 1 cup quinoa 10 oz Enchilada Sauce (recipe below) 1 can diced green chiles corn, I used frozen 1/2 c black beans, drained and rinsed (feel free to use more) 2 tbsp chopped fresh cilantro  1/2 tsp cumin 1/2 tsp chili powder s&p, to taste 3/4 c cheddar 3/4 c mozzarella 1 avocado, diced 1 roma, diced In a large saucepan of 2 cups water, cook quinoa according to package instructions; set aside. Preheat oven to 375. Lightly oil an 8x8 or 2 quart baking dish.  In a large bowl, combine quinoa, enchilada sauce, green chiles, corn, black beans, cilantro, cumin and chili powder; season with s&p, to taste. Buttermilk Syrup

First time that I had buttermilk syrup I thought it was amazing.  Then I made the recipe and realized how much butter there is and realized, this will need to be a once a year kind of thing.  :)   Buttermilk Syrup   1 cube butter 1 cup white sugar ½ tsp. baking soda ½ cup buttermilk Bring to a boil for a minute, turn off heat, then add 1 tsp. vanilla

Mushroom, Onion, & Garlic Sauce over Pasta

You put mushrooms , onions , and garlic in a sentence, and I'm there!  The original recipe called for sage, but I do not have sage. I do however have fresh thyme, and it turned out very yummy! We all enjoyed this dish, and I look forward to making it again since we have a plethora of thyme out there! I truly enjoy cooking with fresh herbs (and any food) straight from your own little garden :) Something about it makes cooking even more peaceful for me. Mushroom, Onion, & Garlic Sauce over Pasta 1/2 lbs mushrooms, sliced 1 onion, finely chopped 2 garlic cloves, finely chopped 1/2 c. stock 1 1/2 c. cream (I didn't have cream, so I used almond milk, and put in some butter, then a little corn starch at the end) 2 tbsp fresh thyme (dill or sage would be good as well) S&P Saute mushrooms, onion, and garlic until the mushrooms start to golden and the onions are soft. Fresh Strawberry Syrup

I discovered I appreciate pancakes more with the following fresh strawberry syrup. This recipe is so easy.  I cooked the syrup for a bit longer than the recipe states.  I didn't strain it; I liked the texture with the strawberries.  Great way to use strawberries that you have that might be a bit too ripe for your liking.    Fresh Strawberry Syrup: 1 pound fresh strawberries, hulled* and diced, (about 3 cups) 1 cup sugar 3 tablespoons orange juice 1/2 teaspoon finely grated orange zest In a medium saucepan , combine all the ingredients and bring to a boil. Lower the heat and simmer until the strawberries are soft and the syrup is thickened and reduced by one-third to one-half in volume, 15 to 18 minutes. Remove from the heat and let cool to room temperature before serving. (If thinner syrup is desired, strain the hot syrup through a fine mesh strainer into a clean container and let cool.) Basic Healthy Cream Sauce

1 cup raw cashews nuts 2 cups water 1 tsp salt 2 tsp onion powder 2-3 TBL chicken or faux flavor seasoning (a paste works best) 1/2 tsp garlic powder 2 TBL cornstarch 1 1/2 cups water (to be added after blending)  Place all ingredients in a blender and blend on high for about 2 min. till smooth, not gritty. (I pre chop the nuts with my Pampered Chef hand chopper then add to blender because I don't have a high powered blender like a Vitamix or Blendtec). Then add the additional 1 1/2 cups water and blend again. *this is a great substitute for cream of mushroom or chicken soup. These are almost entirely of FAT, and the wrong kind of FAT. Even the 98% fat free products are high in FAT.

Julia Child's Hollandaise Sauce

Oh boy, I've been meaning to post this for a year! I made it last February and loved it so much, I kept using it on anything that made sense to put it on. Delicious! Then pregnancy sickness kicked in and suddenly I couldn't stand the thought of it for some reason. Here we are, a year later, and I finally forced myself to make it again, and wouldn't you know, I loved it ;) So I'm finally posting the recipe. It's very easy, and quick to make. Supposedly it's a copy cat of Julia Child's version. Hollandaise Sauce 3 egg yolks 1/4 tsp salt 1-2 tbsp lemon juice 8 tbsp (1 stick) butter, cut into small pieces Pinch of black pepper In a blender, combine egg yolks, salt, pepper, and 1 tbsp of lemon juice. Set aside.  In a small saucepan over medium-high, add the butter and heat until foaming. Rice Bowls

                                                    The other day I felt like Rumbi's rice bowls, but did not feel like spending the money, so this was my attempt at copying them. It's been forever since having their version, so I'm not sure if it's similar or not, but we loved these, so score for us! They are simple, easy, and quick to make. Rice Bowls **estimated measurements, you can really use as much or as little as you want** 1 c. Rice, cooked 3/4 c. Chopped vegetables (carrots, zucchini, peppers, broccoli - your choice) 1 tsp. Sesame Oil 1/4 c. Teriyaki Sauce (recipe follows) 4 oz. Skinless, boneless chicken breast (optional. you could also use shrimp or pulled pork) Teriyaki sauce 1 c. Soy sauce 1/2 c. Sugar 1 tsp. FETTUCCINE ALFREDO

I'm sure most of you already have a recipe for Alfredo, but this recipe is far better than any I have made in the past, so I want to share it with each of you. Unfortunately, I don't have a photo to post, but give it a try, and then let me know what you think. 8 oz. pckg. Cream Cheese (cut into small pieces) 3/4 cup grated Parmesan cheese 1/2 cup butter (do not substitute margarine) 1/2 cup milk 8 oz. Fettuccine, cooked & drained In a large saucepan combine cheeses, butter, and milk. Cook on medium heat, stirring constantly until smooth. Toss pasta lightly with sauce. Serves 4 * I sprinkled parsely on top to give it some color. **Adding shrimp or grilled chicken strips would be delicious.

Cauliflower Sauce

Our little guy has become quite a picky eater recently. So we are getting creative. He loves pasta, so I found a cauliflower pasta sauce on the foodnetwork and made adjustments. It turned out good and the picky eater ate his veggies. We had leftover sauce and I used it over brown rice, with some grated swiss cheese and thought that was even better. Time: about 35 minutes, Serves about 4 people Ingredients 1 pound pasta Salt 1/4 cup extra-virgin olive oil 3 cloves garlic, cracked from skin and sliced 1 onion, chopped 1 head cauliflower, stem removed and chopped 1 cup chicken stock 1 teaspoon of rosemary (maybe more, I'm not positive, I didn't measure) 1 teaspoon of red pepper flakes (maybe more or less, adjust to your taste) 1/4 - 1/2 cream or milk 1 -2 tablespoons of lemon juice 3/4 cup Parmesan or other cheese (as I said, I used swiss the next day and liked it) Salt and black pepper Optional: You could add in cooked mushrooms, red peppers and that was good as well Directions B...

Alfredo Sauce

I found this supposed copycat recipe of Olive Garden's Alfredo recipe and it is by far the closest I have found...I LOVED it and I highly recommend it to you Alfredo lovers! Alfredo Sauce 1 tablespoon butter 1 1/4 cups half-and-half 3/4 cup (3 ounces) grated fresh Parmesan cheese 1/2 teaspoon salt 1/4 teaspoon black pepper (I also added a bit of garlic powder because I'm a garlic-a-holic...fresh garlic would be great!) Melt butter in a large skillet over medium heat. Add half-and-half, cheese, salt, and pepper; cook 1 minute, stirring constantly. Bon Appetite!
