Roasted Garlic, Chicken & Herb Pizza, with a new Crust recipe

We very much enjoyed this delightful pizza, I just LOVE homemade! It's such a great way to get kids involved and learning about food and cooking. Next time I will double the sauce and add tomatoes, for color, and added yumminess. This crust recipe turned out great, as well! I recommend getting a pizza stone. Ever since using one we've really enjoyed all our crusts. Awesome Pizza Dough

Josh and I are very excited about this pizza dough recipe. We have tried many homemade pizza's and were never in love with the crust. They tasted too much like bread dough, you know, like the dough that turns into homemade bread, and that is not what I want my pizza tasting like. This however, reminded us of good thin crust pizza from some of our favorite gourmet pizza restaurants!  Pizza Dough 1 1/4 c warm water 2 envelopes (2 1/2 tsp each) active dry yeast 2 tsp red wine vinegar 3 tbsp olive oil, plus oil for greasing 4 cups flour, plus flour for dusting 2 tsp sugar 1 tbsp kosher salt (we used sea salt since that's what we had) Combine water, yeast, vinegar, and 3 tbsp olive oil in the bowl of a stand mixer with the dough hook. Mix on low speed until just blended, about 30 seconds. Add 1 cup of the flour and mix on low speed for 30 seconds. Roasted Bell Pepper & Artichoke Pizza

This isn't a greasy pizza and often we make it sauce-less, but let me tell you, this pizza was yummy and felt healthier, though I don't actually know if it is. Oh and the recipe isn't really a recipe, but more like a guide. Roasted Bell Pepper & Artichoke Pizza Pizza dough enough for one medium size pizza (we prefer it with thin crust) Marinated artichoke hearts 1 roasted red bell pepper, chopped Very thinly sliced red onion  Thinly sliced zucchini, with peel on (I only did about a fourth of the zucchini) Mozzarella, feta, and Parmesan cheese (leave off whatever you don't like) olive oil minced garlic *sometimes we do a very thin layer of a white sauce then top the pizza, sometimes we don't Form pizza dough.  Bake for about 5 minutes at 500 degrees.  Remove crust and brush with olive oil and garlic or white sauce.  Then top with toppings of choice.  I don't love feta, so I do half of the pizza without and then the other half gets the feta but not the parm....

Basic Pizza Dough

1 Tablespoon active dry yeast 3/4 cup plus 2 tablespoons lukewarm water 1 Tablespoon sugar 2 3/4 cups all-purpose flour (approx.) 1 teaspoon salt 1-2 tablespoons olive oil In a small bowl, dissolve the yeast in the water and & sugar. Let stand until slightly foamy on top, about 10 minutes. In a small mixing bowl, stir together the flour and the salt and form into a mound. Make a well in the center and add about a half of a tablespoon of olive oil and the yeast to the well. Using a fork and stirring in a circular motion, gradually pull the flour into the yeast mixture. Continue stirring until a dough forms. (personal note, I only add about 2 cups of the flour at first. And then after a dough forms, I add more flour as I knead the dough. I add flour until the dough isn't sticky) Transfer the dough to a lightly floured work surface. Using the heel of your hand, knead the dough until it is smooth and elastic, about 10 minutes. Pizza Quesadilla

Last night I was hungry but nothing looked good. So I looked in the fridge & saw we had pizza sauce and decided to see what it would taste like as a quesadilla. I thought it was great & thought I would share: Makes one serving 2 flour tortillas 2 spoonfuls of pizza sauce Parmesan cheese Spread the pizza sauce over one side of one of the tortillas then sprinkle cheese on top. Put the other tortilla on top. Either cook it in a quesadilla maker or cook it in a skillet on the stove. If I were to do it on the stove, I think I would cook it on medium & just long enough to heat it through. Then eat. Super easy, makes a good snack.
