Butter Free Lemon Pasta

  Recipe I saw and want to try Butter-Free Lemon Pasta Ingredients Cooked spaghetti (1 box) 2 tbsp olive oil 2 cups mixed mushrooms 2 tbsp shallots, chopped 1 tbsp garlic, minced 1 tsp fresh thyme, chopped Cooked oatmeal (1 cup of steel-cut oats, 4 1/2 cups of water, and 1 chicken or vegetable bouillon cube) 1 cup grated parmesan 1/2 tbsp lemon zest 2 tbsp chives, chopped 1 tbsp basil, chopped 1/2 cup of peas, cooked 4 tbsp lemon juice Salt and pepper Directions In a large pot, boil 4 cups of water. Then add 1 cup of oatmeal and one cube of chicken (or vegetable) bouillon. Cook for 15 minutes. In a bowl or liquid measuring cup, strain about 1/2 cup of liquid from the cooked oatmeal. Add this liquid to the pan after step 3 is complete. In a large pan over medium heat, add about 2 Tbsp. olive oil. Add mushrooms, shallots, garlic, and thyme. Sauté for about 30 seconds. Lemon Butter Sauce for pasta - via Kristin

Kristin made this and our kids all ate it so it is a recipe I need to keep.  I think it would taste great with some veggies added to the pasta. Lemon Butter Sauce - heat everything together in a saucepan and pour over pasta. Done. ¼  c butter ¼  tsp oregano ¼  tsp basil ¼  tsp garlic 3 Tbsp lemon juice ¼  cup chicken broth

Cherry Clafoutis

 There are many clafoutis recipes.  I typically enjoy them all, but I prefer clafoutis that is creamy rather than rubbery.  I also prefer pitted cherries.  I find it a better eating experience if I don't have to spit pits out each bite.  I tried the following recently and this one seems pretty good to me.   3 large eggs 1/2 cup (100 grams) sugar (I want to try 1/3 sugar next time) 6 tablespoons (85 grams) unsalted butter, melted and slightly cooled, plus more to butter your pie dish 1 cup (130 grams) all-purpose flour A couple pinches of salt 1 cup (235 ml) milk (I had fat free so I did about 2/3 milk and 1/3 cream - I will need to experiment on this because I think this changes the texture) 1/2 teaspoon almond extract 2 teaspoons vanilla 2 generous (245 grams) cups sweet cherries, pitted if you wish - I covered the entire bottom of my deep pie dish and I quartered the cherries.  I haven't done that before but I think it was a positive change. BiBimBap (BEE-bim-bap)

 Hazel chose this for dinner and it was a hit for most of the family.  There is a lot of flexibility with the recipe.  Feel free to swap out veggies for different ones.  We are planning on trying out some variations and see what we think.  I was a big fan of purple cabbage and spinach in mine. It is a bit time consuming to make with all of the prep work. Delicata Squash Fries with Awesome Sauce

 I was surprised when most of the kids really enjoyed this.  I was afraid of the awesome sauce, but when I tried it with the squash, I thought it paired well.  By itself, I thought the sauce strange.  Isla loved the sauce, with or without the squash.  I like that you don't have to peel this squash, the skin was tender enough to eat.  I did peel off some of the bumps.   Ingredients : 3-4 medium delicata squash (2 pounds) 1 1/2 tablespoons olive oil 1 teaspoon kosher salt 1/2 teaspoon ground black pepper For the awesome sauce / dip 1/2 cup sour cream or crème fraîche 2 tablespoons hot sauce (we used a Mexican hot sauce) 1 teaspoon soy sauce 1/4 garlic powder 1/8 teaspoon dried dill Instructions: Preheat the oven to 450. Princess Torte Cake, Simplified

 The kids saw a princess torte cake on The Great British Baking Show and they have wanted to make one ever since.  I recently found a simplified recipe so Isla gave it a go.  A true princess torte cake is domed, but this recipe is in a more traditional layered form. Isla wants to try it again with some modifications.  She wants more custard and less jam.  She is considering not doing jam at all but simply smashing some raspberries and using that. Chicken Shawarma via Nadiya

 Serves 4 - According to the recipe, this freezes well but I haven't tried that yet.  All I know, all the kids ate this, even the ones that don't like spicy, so I need to keep this recipe. You can serve this with flatbread or pitas.  We had it with hummus.  I think it would be nice with tzatziki.  The recipe suggested serving it with a slaw.  We didn't like the slaw recipe we used but I hope to find one that I like.
