Green Eggs & Ham

I found the following recipe on the Top Chef (Bravo) website and think it is a fun idea for St. Patrick's day. Since we don't eat much meat, we just made the egg and salsa. It was good, the egg is just a normal egg so the salsa makes it a bit more special. My guess is this recipe really pops when you have the ham with it. In any case, I'm hoping our children will think it is fun. Here you go:
Carla's Green Eggs & Ham
Prep time, about 30 minutes
Serves: 3-4
Ingredients:
For Green Eggs:
4 egg whites
1/2 cup spinach
4 quail yolks (we just used the yolks from the eggs where we got the whites, chicken eggs)
Salt & Pepper to taste
Ham & toast:
8 oz. ham or thick bacon, diced
chives
brioche
clarified butter
Salsa: (i didn't actually follow this at all, just kind of used it as a guide, so I'm not positive what it is like if you follow the recipe)
1/2 avocado, small diced
1 green tomato, small dice
1 jalapeno, small dice
1/2 tsp garlic, minced
1/2 tsp chives, snipped finely
salt & pepper to taste
Parsley
1 jalapeno, roasted & peeled & diced
olive oil
Salt & Pepper to taste

Directions:
1. Blend the spinach with 2 egg whites. Whisk into the remaining 2 egg whites.
2. In a cold skillet sprayed with oil and on low heat, pour in the spinach mixture.
3. Gently spoon the quail yolk into the center of spinach/whites. Cook until whites are
set.
4. In another pan, cook bacon or ham. Drain pieces on a paper towel.
Toss bacon with chives.
5. Brush brioche with clarified butter. Toast in medium skillet.
6. Create parsley-jalapeno oil by blending 1 cup parsley, and roasted jalapeno with 1 cup oil, and add salt.
7. Combine jalapeno oil and all the ingredients for salsa. Season to taste.
8. Serve each green egg with diced bacon, salsa and toast. Enjoy!
