Cauliflower Sauce

Our little guy has become quite a picky eater recently. So we are getting creative. He loves pasta, so I found a cauliflower pasta sauce on the foodnetwork and made adjustments. It turned out good and the picky eater ate his veggies. We had leftover sauce and I used it over brown rice, with some grated swiss cheese and thought that was even better. Time: about 35 minutes, Serves about 4 people Ingredients 1 pound pasta Salt 1/4 cup extra-virgin olive oil 3 cloves garlic, cracked from skin and sliced 1 onion, chopped 1 head cauliflower, stem removed and chopped 1 cup chicken stock 1 teaspoon of rosemary (maybe more, I'm not positive, I didn't measure) 1 teaspoon of red pepper flakes (maybe more or less, adjust to your taste) 1/4 - 1/2 cream or milk 1 -2 tablespoons of lemon juice 3/4 cup Parmesan or other cheese (as I said, I used swiss the next day and liked it) Salt and black pepper Optional: You could add in cooked mushrooms, red peppers and that was good as well Directions B

Public Recipes...

I have set our blog to 'Public' again. We went private before because some weirdo woman made a comment and was mean to our lovely sister, Allison. Also we got spam comments...and who likes Spam? It's gross! ;) Anyways, I decided to make it public again because I know I am grateful for the delicious public recipes I've found out there. In order to keep rude people from making comments, I have changed our settings to "moderate all comments". This just means we'll approve them first, so we can fish out the negative ones. Et Voila! So, keep posting my friends! And if you're a stranger reading this who is tempted to write something mean...just think to yourself, "Would Jesus want me to be a meanie?". That answer is nay, nay, and nay again. Friendly Reminder: Would everyone be so kind as to make sure you add Labels to your recipes? Falafel

Falafel is great to fill into a pita with some yogurt sauce, or hot sauce, cucumbers, tomatoes, fries... (I found this image from here .) Serves: 8 Difficulty: medium Prep & Cook time: 2 hours 2 cups dried garbanzo beans 1 1/2 cup dried fava beans (or more garbanzos if you can't find favas) 1 cup fresh cilantro (must be fresh) 1/2 cup fresh parsley (must be fresh) 8 garlic cloves minced 2 tsp salt 1 tbs coriander 1 tsp cumin 1 very large onion 1/2 tsp blk pepper 1/4 tsp cayenne pepper 1/2 cup bread crumbs 1/4 cup flour 2 tsp baking soda, added 15 minutes before frying 1/2 tsp baking powder Soak the garbanzo beans and fava beans in water over night before the day of cooking. Yummy Strawberry Milk

This is a new drink Rees & I are quite enjoying right now. Jeff would give it 7.5 out of 10, I would give it an 8.3 and Rees would give it a 10. I let Rees help by putting the berries in the blender. I like that it is easy, quick, pretty and healthy. Ingredients: 1-2 cups milk (start with one and add more if you want) 1 pint of strawberries, rinsed and stems removed (site that I used for this recipe only calls for an handful of berries, which was also good) 1 - 3 Tbsp honey Method : Put milk, berries and 1 T of honey into blender. Blend until smooth. Taste and add more honey if you wish.

Turtle Cake - Cafe Latte

I'm not a person that picks cake. I prefer cheesecake, ice cream, crepes... However, I think this is a great chocolate cake recipe and if my children ever want a chocolate cake for their birthday, this just might be my go to. This recipe & image is from Cafe Latte, a local restaurant out here that makes fabulous desserts. Cake Ingredients: • 1 Egg. • 2/3 cup Vegetable oil. • 1 cup Buttermilk. • 2 cups Flour. • 1 3/4 cups Sugar. • 1/2 cup cocoa. • 1 tsp. Salt. • 1 tbsp. Baking soda. • 1 cup Hot coffee *see note below Frosting : • 1/2 cup Milk. • 1 cup Sugar. • 6 tbsp. Butter • 2 cups Good-quality semisweet chocolate chips. • 3/4 cup Caramel. • 1 1/2 cups Toasted pecans. Prepare oven and pans: Preheat oven to 350 degrees. Grease 3 (9-inch) cake pans. Cover each bottom with disk of parchment paper. To make cake : In bowl, combine egg, oil and buttermilk. In large separate bowl, mix together flour, sugar, cocoa, salt and baking soda.
