Garlic Shrimp and Sundried Tomatoes with Pasta and Sauce

I did make a change, and that was to run the sun-dried tomatoes through a food processor, because I'm not a fan of the texture when they are in big chunks, and that solved the problem.   Garlic Shrimp and Sun-dried Tomatoes with Pasta and Sauce 1/2 lb shrimp 4 oz sun-dried tomatoes in olive oil salt 1/4 tsp paprika 4 garlic cloves, minced 1 c milk 1 tsp dried basil 1/4 tsp crushed red pepper 1 c parmesan cheese 8 oz pasta, I used angel hair, the original recipe called for fettuccine In a large skillet, saute minced garlic and sun-dried tomatoes in oil (I used the oil from the tomatoes) for one minute until garlic is fragrant. Brazilian Shrimp Soup

photo cred: www.jocooks.com  We had this last month some time and we all enjoyed it. Unfortunately since I didn't post this right away I can't remember if there was anything we wished different. It was really easy to quick to make . Brazilian Shrimp Soup 2 tbsp olive oil 1 medium onion, chopped 1 bell pepper, chopped 4 cloves garlic, minced 1/2 c long grain rice pinch of red pepper flakes 2 tsp salt 1 15oz can crushed tomatoes 4 c water 1 c canned unsweetened coconut milk 1 lb medium shrimp, shelled and cut into inch pieces 1/4 tsp ground black pepper 1 lemon, juiced 1/2 c chopped fresh parsley In a large pot heat the olive oil over low heat. Add onion, bell pepper, garlic and cook stirring occasionally until the onion and pepper are soft. Add the rice, red pepper flakes, salt, tomatoes and water to the pot and bring to boil. Shrimp & Veggie Pesto Pasta

photo cred: peasandcrayons.com I made this over the weekend and it was a hit with Abigail and Josh, but not so much Mailie Ryan...though I attribute that to the fact that she eats like a chipmunk. I thought it was good, though it turned out slightly too heavy for me, so I'd like to tweak it a bit. Shrimp & Veggie Pesto Pasta Farfalle (bow-tie) pasta 8oz sliced baby portobello mushrooms 2.5 oz baby spinach leaves 2-3 cloves garlic, minced 6 tbsp pesto 1/2 c grated parmesan 1/4 c milk or cream (I used cream this time, so maybe I would have preferred milk) 1/4 tsp garlic powder 1/4 tsp onion powder 1/4 tsp paprika drizzle of olive oil pinch of red pepper flakes s&p to taste For the shrimp: shrimp, fresh or frozen 1/2 tbsp butter 1/4 -1/2 tsp dried parsley 1/4 tsp garlic powder 1/4 tsp cajun seasoning 1/8 tsp onion powder 1/8 tsp paprika s&p to taste Bring a large non-stick pan to medium heat and saute mushrooms...

Shrimp Salad with Grapefruit and Avocado

I was really curious how the girls would like this, but at first bite they both said it was "yummy". So a win! We really enjoyed it. It's very simple and quick to make. Shrimp Salad with Grapefruit and Avocado 1 c shrimp 2 tbsp chili paste 1 tbsp oil S&P 1 avocado, cubed 1 c cooked rice Balsamic reduction to drizzle on top salad greens (I used arugula) In a pan on medium, heat oil, then place in shrimp and chili paste. Cook until opaque and starting to brown. Add s&p to taste. Place down greens, and then at this part I used a cylinder cookie press, but you can obviously to place everything on there like a normal salad. First add rice and press firmly, followed by the avocado and grapefruit. Place shrimp on top and drizzle with balsamic reduction. Viola! Bon Appetite!

Grilled Tilapia Bowls with Chipotle Avocado Crema

It was delicious, quick to make, and filling.  Grilled Tilapia with Chipotle Avocado Crema Tilapia Seasoning: 1 tsp chili powder 1 tsp paprika 1 tsp cumin 1 tsp garlic powder 1/2 tsp salt 1/4 tsp pepper Tilapia filets Chipotle Avocado Crema: 1/2 c greek yogurt juice of one lime 1 large avocado 1 garlic clove 1 chipotle pepper (from a can of chipotle peppers in adobo sauce) s&p Other Ingredients: 2 cups cooked quinoa (to your liking) 1 can black beans, rinsed and drained 2 ears fresh corn, shucked (you can also use frozen corn if you don't want to grill it) Fresh cilantro Fresh tomato, diced In a food processor, add yogurt, lime juice, avocado, garlic clove, chipotle pepper, s&p. Angel Hair with Herb Broth and Clams

  Mailie went to town on these clams, making sure to lick down the shells...a bit caveman-ish. This dish was a big hit, and we'd definitely eat it again...though not often, as clams aren't the cheapest of purchases, sadly. Oh to live by the sea, and enjoy fresh seafood daily. Perhaps one day. The only thing I'd do differently is add more water to the broth, since the pasta pretty much soaked it all up. It was flavorful though, and yummy to dip your crusty bread in .
