Stuffed Burgers

Image
You may be surprised to see Allison is posting a burger recipe, but I am. A friend recently wanted to make this with us so we gave it a try and I think my meat-eater family would enjoy this. Ingredients: 2 lbs of lean ground beef or turkey (we used turkey and I was very nervous about it, but got to tell you, it was good and I'm told it is healthier than ground beef) 1/2 teaspoon freshly ground black pepper, divided 1/2 teaspoon Kosher or Hawaiian salt, divided 1 large onion, diced 2 tablespoons Worcestershire sauce 1 cup shredded cheese (Cheddar, swiss, or pepper jack) (we used swiss and it was very good) 4 ounces cream cheese, room temp 1 tablespoon Dijon mustard Lettuce Onion, thinly sliced Beefsteak tomatoes 6 buns or bread rolls Preheat barbecue grill to medium heat. In a mixing bowl, combine ground beef, pepper, salt, onions, and Worcestershire sauce. Form 12 patties about 1/4 inch thick. Set aside. (So our burgers were huge, so if I were to make them again, I would make sure

Colcannon

I got the above image & the below recipe from here . It is an Irish dish so I made it for St. Patrick's Day. I'll admit I was a bit worried about the potato cabbage combo, but it was good. I think even Jon & Kristin might like this. And I read that cabbage is good for you so here is another way to eat cabbage. Colcannon 6 large potatoes, peeled 4-6 Tb half-and-half 1 tsp kosher salt 1 1/2 onions, finely chopped 6 Tb butter, divided 1/2 of a small head of cabbage, sliced thinly 1. Cut peeled potatoes in quarters and place in pot. Fill with enough water to cover and boil for 25 minutes, or until soft. While the potatoes are cooking, melt 4 Tb butter in large saucepan. Add minced onion and stir to coat with butter. Add cabbage over onions. Cover saucepan and cook over med-low to medium heat for 20 minutes, stirring occasionally, or until cabbage is soft. 2. Drain potatoes and add half-and-half (or milk) and salt. Mash with electric mixer. Stir together onion and cabbage

Green Eggs & Ham

(image from bravotv.com) I found the following recipe on the Top Chef (Bravo) website and think it is a fun idea for St. Patrick's day. Since we don't eat much meat, we just made the egg and salsa. It was good, the egg is just a normal egg so the salsa makes it a bit more special. My guess is this recipe really pops when you have the ham with it. In any case, I'm hoping our children will think it is fun. Here you go: Carla's Green Eggs & Ham Prep time, about 30 minutes Serves: 3-4 Ingredients: For Green Eggs: 4 egg whites 1/2 cup spinach 4 quail yolks (we just used the yolks from the eggs where we got the whites, chicken eggs) Salt & Pepper to taste Ham & toast: 8 oz. ham or thick bacon, diced chives brioche clarified butter Salsa: (i didn't actually follow this at all, just kind of used it as a guide, so I'm not positive what it is like if you follow the recipe) 1/2 avocado, small diced 1 green tomato, small dice 1 jalapeno, small dice 1/2 tsp
