Pork Chops over Rice

Josh called me from work and asked if I could bring him some lunch and said he really felt like rice with pork. Just so happened I had one pork chop in the freezer. So I found this recipe and it was really delicious; he loved it! Also it was very quick to make! Pork Chops over Rice INGREDIENTS 4 boneless pork chops (this all worked fine with just the One pork chop I had) 1 tablespoon vegetable oil 1 cup uncooked long grain rice 1 (14.5 ounce) can chicken broth 1/2 cup water 1 small onion, chopped 1 (10 ounce) package frozen peas 1/2 teaspoon salt 1/2 teaspoon dried thyme DIRECTIONS 1. In a large skillet over medium heat, brown pork chops in oil; remove. Drain. Add the remaining ingredients to skillet. Place pork chops over the rice mixture. 2. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until rice is tender. Bon Appetite!

Peanut Butter-Nutella Brownies

K, these are chewy soft fudgy brownies. I think they taste better the day after. We think they are good, but super not healthy & not the cheapest so not sure I would make it for every neighbor, but maybe once in awhile. The batter was super good to eat off the spoon. 1 cup unsalted butter, melted 2 cups sugar 2 teaspoons vanilla extract 4 large eggs 1 cup flour 3/4 cocoa powder 1/2 teaspoon baking powder dash of salt 1/2 cup smooth peanut butter 1/2 cup nutella Preheat oven to 350 degrees and grease a 9 by 13-inch glass baking dish. Mix butter, sugar and vanilla in medium bowl. Add the eggs one at a time, beating after each addition. Add the flour, cocoa, baking powder & salt. Mix well. Melt the peanut butter & nutella together in a microwave proof bowl. Just heat it long enough for a runny consistency. Then stir the mixture into the batter & mix well. Pour into baking dish. I ordered these all the time from the Lion's Den at the old LDSBC! They are definitely very filling, and scrumptious! As long as you don't add a ton of ranch, and sour cream, they really aren't that bad for you! Spicy Chicken Wraps 1 Spinach Tortilla (warmed up on a pan) 1/4 c. Chicken (Pan fried in any spicy sauce you love, or non spicy if you prefer) 1/4 c. Romaine Lettuce (or any other you prefer) 1 Tbsp. Cucumber 1 Tbsp. Cheddar Cheese 1 Tbsp. Salsa or Pico de Gallo 2 Tbsp. Sour Cream (I like to spread this around the tortilla first) 2 Tbsp. Ranch Of course you can add or not add as you please; use a different kind of tortilla, or whatever you want. These are just what I like to add. I love them! Bon Appetite!
