Almond Squares

I made these for a church thing back in September. These turned out good & easy. I cut out about 1/3 cup sugar and some of the butter and they turned out good. (a sister in the ward didn't cut the sugar and thought hers turned out too sugary) I'll post the original recipe though and you can decide if you want to make any adjustments.

Prep: 25 minutes Bake: 20 minutes Broil: 1 minute Oven: 350 degrees Servings: 32 bars

Ingredients:

2 eggs
1 C sugar
1 C butter, melted (you can also use margarine, but I suggest only for half of the amount)
1 C flour
1/2 C butter
1/2 sugar
1/2 sliced almonds
1 T flour
1T milk

1 - Preheat oven to 350 F. Grease and lightly flour a 13x9x2 inch baking pan; set aside

2 - For crust, in a medium mixing bowl, beat eggs and the 1 C sugar with an electric mixer on medium speed for about 8 minutes or until thick and lemon colored. Stir in the 1 cup melted butter and the 1 cup flour. Pour into prepared pan.

3 - Bake for 20 -25 minutes or until a wooden toothpick inserted near center comes out clean and edges begin to pull away from pan.

4 - For topping, in small saucepan, combine the 1/2 cup butter, the 1/2 cup sugar, the almonds, the 1 tablespoons flour and the milk. Cook and stir over medium heat until the mixture comes to a boil.

5 - Adjust over rack so top of the pan is 3 to 4 inches from heat. Spoon almond mixture over hot crust. Broil about 1 minute or until golden, watching carefully to avoid burning. Cool in pan on a wire rack. Cut into squares. (it doesn't need to be a uniform golden, but more golden than not)

To tote: Place squares in a single layer in a shallow container and cover.

For 16 squares, half the recipe and bake in 8x8x2 - inch pan.
