The other day I felt like Rumbi's rice bowls, but did not feel like spending the money, so this was my attempt at copying them. It's been forever since having their version, so I'm not sure if it's similar or not, but we loved these, so score for us! They are simple, easy, and quick to make.
Rice Bowls
**estimated measurements, you can really use as much or as little as you want**
1 c. Rice, cooked
3/4 c. Chopped vegetables (carrots, zucchini, peppers, broccoli - your choice)
1 tsp. Sesame Oil
1/4 c. Teriyaki Sauce (recipe follows)
4 oz. Skinless, boneless chicken breast (optional. you could also use shrimp or pulled pork)
Teriyaki sauce
1 c. Soy sauce
1/2 c. Sugar
1 tsp. Grated ginger, very fine
1 Garlic clove, minced
3 Scallions chopped fine
Chili Garlic Sauce (optional)
Mix everything together, and set aside. I added probably a tsp. of the chili garlic sauce for heat.
If using chicken, shrimp, or pulled pork, prepare to your liking. For chicken I just pounded it, added salt and pepper, and then grilled it in the pan. Then I poured some of the teriyaki sauce on top just to marinate while I cooked the veggies.
In a wok or pan heat the sesame oil on med-high, and cook your veggies to your liking. I like them a bit crisp. Spoon in some teriyaki sauce, and mix. Add chicken and mix up.
Place some rice in a bowl, pour a little teriyaki sauce over the top, then add your veggies and chicken. And voila!
There really aren't specific directions to these things. Just add what you want, and how much you want, and you'll figure out what you like :)
