Chicken Caesar Wraps

I absolutely love my Spicy Chicken Wraps (I'll be posting that soon) but I felt like a lighter wrap today; plus this one is healthier! That always makes me happy. They are super easy! I don't have exact measurements because I just do it as I go. This is for 1 serving. Chicken Caesar Wraps 1 Tortilla (I love Spinache, and Sundried Tomato & Basil) 1/4 c. Grilled Chicken (grilled with EVOO, garlic, and a pinch of salt) 1/4 c. Red Leaf Lettuce 2 Tbsp. Caesar Dressing (I love Drew's All Natural Romano Caesar!) 1 Tbsp. Feta Cheese 1 Tbsp. Shredded Parmesan 1 Tbsp. Pico de Gallo I also like to drissel a little ranch when I feel I deserve it. Of course you can add more or less of any of the ingredients. This amount fills me up without feeling stuffed. Bon Appetite!

Pizza Quesadilla

Last night I was hungry but nothing looked good. So I looked in the fridge & saw we had pizza sauce and decided to see what it would taste like as a quesadilla. I thought it was great & thought I would share: Makes one serving 2 flour tortillas 2 spoonfuls of pizza sauce Parmesan cheese Spread the pizza sauce over one side of one of the tortillas then sprinkle cheese on top. Put the other tortilla on top. Either cook it in a quesadilla maker or cook it in a skillet on the stove. If I were to do it on the stove, I think I would cook it on medium & just long enough to heat it through. Then eat. Super easy, makes a good snack.

Red Wine Vinaigrette

For someone like me who just loves loves loves Ranch and not a big fan of vinaigrette's this was a blessing for me! I have been searching for a vinaigrette that I could handle and love so I can finally be eating healthier salads. I have a mustard Vinaigrette from France that Monique taught me, but I would like more than one option. So I finally found it! RED WINE Vinaigrette, it is delicious!! Red Wine Vinaigrette 5 Tbsp. Red Wine Vinegar 1 Tbsp. Fresh Lemon Juice 1 1/2 Tsp. Dried Oregano 6 Tbsp. Olive Oil (I also like to add some Dijon Mustard every once in a while) Bon Appetite!

Cheese Fondue...DELICIOUS!

Sometimes I feel like fondues start to get gross as you get towards the bottom, but this stayed yummy the whole time. It's easy! Enjoy! Cheese Fondue 3/4 cup chicken broth 2 Tbsp. GREY POUPON Dijon Mustard 1 Tbsp. cornstarch 2 cups shredded CRACKER BARREL Sharp Cheddar Cheese BRING broth to boil in heavy saucepan on high heat. Reduce heat to medium. STIR mustard into cornstarch until well blended. Add to hot broth along with the cheese; stir with wire whisk until well blended. Cook until cheese is completely melted and mixture is well blended, stirring constantly. POUR into fondue pot or hollowed-out round bread loaf. Serve with assorted dippers, such as bell pepper strips, pretzels, apple chunks and broccoli florets. If serving in a bread loaf, cut the bread removed from the loaf into bite-sized chunks to also use as dippers. Bon Appetite!
